'05 Jenke Cabernet Sauvignon The wine is a full-bodied style showing the hallmarks of a wine with great Cabernet character. A huge nose of ripe blackcurrants, mulberries and dark cherries enhanced by some toasty oak and dusty tannin. The big, bold and firm palate is classical, with power, structure and complexity to develop for ten years and beyond. This is a big flavorsome wine, with supple perfumed cassis aroma, lovely dark hues and a powerful mouth filling palate of beautiful seamless flavours of sweet dark fruit characters. A wine set to restore the fortunes of Cabernet Sauvignon. The grapes were harvested at optimum ripeness (15be) and crushed into an open top fermenter. The wine fermentated on skins for 10 days. This wine completed its fermentation in 100% French oak barrels where it remained on yeast lees for 12 months. The wine was then racked and transferred back to barrel for an additional six months maturation before bottling. |
